One of the most underrated American food holidays is right around the corner—can you guess what it is? Super Bowl! Do I watch football, or even understand it? No. (Trust me, I’ve tried.) But, I do love any excuse to throw a themed party, full of tasty snackies. There are few tenets that make up the dreamiest, most delectable game day spread.
Firstly, ya need something fried and spicy, like my Harissa Honey Popcorn Chicken, built to withstand a few hours of sitting out without sogging out. Next up, something fresh and crunchy, preferably in the form of a platter of vegetables, plus at least a couple dips to keep things interesting. And, lastly, something in a crockpot. This can be sticky-sweet-spicy party meatballs, or my favorite sports eats: Chili.
This year, I’ll be in Rajasthan on Super Bowl Sunday, but if I were stateside, I’d be making a big ol’ batch of this green chicken chili. Inspired by Mexican chile verde, it’s packed with tomatillos, poblano and jalapeño peppers, cilantro, cumin, coriander, and oregano. Ground chicken provides a meaty backbone—but ground dark meat turkey or pork would wonderfully, too—with canned white beans adding extra heft. A sneaky spoonful of masa harina added at the end tightens up the chili, resulting in the perfect thick, spoonable texture. Make it the day before your party, then pop it in a crockpot (or Instant Pot set to “keep warm”) to heat up, and serve with a whole slew of toppings for your guests to build their perfect bowl.
